This recipe is very handy in warm days when we don't feel like eating warm food. You can serve it when is still slightly warm or even from fridge.
Millet gives you a feeling of fullness and with combination of fresh salad you won't feel heavy and tired after eating.
- Rinse the in a sieve under cold running water. Put in a pan with the stock; bring to the boil, cover and simmer over low heat for approximately 15 minutes. The stock should be absorbed and millet should be fluffy.
- Chopped all the vegetable and put it in large bowl. Add olive oil, salt and pepper. Mix well
- Add cold or slightly warm millet and mix together.
- Garnish with the sprigs of fresh parsley or coriander.
