Vegeterians and vegans will love this simple rice recipe. You can add wild or cultivated mushrooms if you like them.


  • Heat the oil in a large pan. Add the chopped onion, crushed garlic and coarsely grated carrots.Cook for 3-4 minutes, stirring occasionally.
  • Drain the rice and add it to the pan with caraway seeds, ground coriander. Cook for 1 minute, stirring to coat the grains in oil.
  • Pour the vegetable stock or water, add the bay leaf and season well with salt and pepper. Bring to the boil, then lower the heat, cover and simmer very gently till all water is absorbed. Check if rice is finish.
  • Garnish with the sprigs of fresh parsley or coriander
